Feb 27,2019 Let’s start describing what they are and then we’ll tell you about it’s origins. They are a type of stuffed pasta, similar to the ravioli, but rounded and larger. The dough is made without eggs and its original filling is with a ham, mozzarella and provolone. Nowadays you can find any variety of flavours to adapt to the place and people’s preferences. At Pasta del Pellegrino our clients’ favourites are caprese (mozzarella tomato and basil) and the walnut ricotta and ham ones. We’re always innovating and we’ve offered salmon and ricotta ones, calabrese (mozzarella, tomato and spicy sopresata), the traditional ham and cheese and others.
